BARLEY
Barley is one of the world’s oldest cultivated cereals. Barley is extensively used as food, cattle feed and for malting and brewing.
COMPOSITION

The hull content of hulled barley is about 13%. The average composition of Indian barley is as follows: moisture-12.5 %; protein-11.5 %; lipids-1.3%; minerals mater-1.5%; fibre-3.95% and carbohydrates-69.3 per cent. Among minerals, iron is in high proportion. Along with B vitamin, small amounts of vitamins A, D and E are present. Barley starch contains 19 per cent amylase and 81 per cent amylopectin.

For medical use barley is being researched for its ability to help alleviate diabetes, high cholesterol, and obesity. Like oatmeal, barley contains both soluble and insoluble types of fiber that may help to lower cholesterol. Additionally, barley may assist in weight loss because it acts as an appetite suppressant. Barley may also protect against colon cancer.
